Cooking Tip:
Do you use cornstarch and water to thicken gravy, soups, etc.? Next time you want to thicken your gravy for roast or even your broth for beef stew or vegetable soup, try adding instant potatoes instead. Works great.

Coffee Flavored Beef Roast

1 Beef Roast
1 tsp salt, divided
½ tsp. pepper, divided
2 tsp. vegetable oil
1 medium onion, halved and sliced (optional)
2 cups whole fresh mushrooms, quartered (optional)
1 garlic clove, minced
1 tsp chili powder
1 ½ cups brewed coffee
3 T. cornstarch
½ cup cold water

Sprinkle beef with half of salt and pepper. In a large skillet, brown the beef in oil on all sides. Transfer to slow cooker.In same skillet, sauté the onion in the drippings for 2 minutes. Add the mushrooms and garlic, cook 2 minutes longer. Stir in the coffee, chili powder and remaining salt and pepper. Pour over meat. Cover and cook on low for 6 – 8 hours or until meat is tender. Remove meat and vegetables to serving platter; keep warm. Bring liquid to a boil in saucepan. Combine cornstarch and water until smooth,; gradually stir into the pan. Bring to a boil, cook and stir for 2 minutes or until thickened.
